Kaara Seeval - Ribbon Pakoda



Gram flour – 100g
Rice flour – 100g
Fried Gram flour – 1 tbsp
Salt to taste
Black Sesame seeds – ¼ tsp
Ghee – 1 tbsp
Refined Oil – to deep fry
To prepare crushed powder
Curry leaf – a few
Dry Redchilli – 2nr
Garlic cloves - 2
Cumin seeds – ¼ tsp

Method of preparation:

1.                 Dry fry the crushed powder ingredients and make it as a crushed powder.

2.        Put gram flour, rice flour, fried gram flour, salt, crushed powder, ghee and sesame seeds in a      basin. Add enough water into the flour mixture, mix it gently and prepare it as stick free dough.

3.       Keep the seeval dough into the seeval intruder, press it into the hot oil as swirling position. Deep fry it.

4.       Garnish with fried curryleaf.

Kai Suthu Murukku – Hand Spun Murukku


Murukku is being prominent among the foods which are associated with our culture. The crispy Murukku is the age old one which is liked by all people without any age discrimination. Murukku means ”twisted” in Tamil language and it is a traditional treat of festivals.

In ancient days, the bowl was prepared by wood and it had different shapes of holes where Murukku dough was intruded by the force of another wood slot. It was intruded in different artistic shapes on the rocks; later the murukku was dried and eaten.


In most of the places in Tamilnadu, the Murukku intruder is a must in the bride’s offerings list. With the help of intruder, Thenkulal, Kattaimurukku, Mul Murukku, Butter murukku and many more varieties are prepared. The different shapes of murukku are given by the sheet plates in the intruder.

Kaisuthal Murukku (Hand spun Murukku) is the most popular Murukku variety in Tamilnadu. Women just use their hands to swirl the dough mixture around pebble stone, to get the spiral roll shape, without the intruder or mould. The spiral murukku which appears tough, melts in seconds in mouth. Its mild hotness, asafoetida flavours with taste overtakes other murukkus. 


Take one kg of rice flour (pulungal arisi) and 400g of urad flour. Add cumin seeds, black sesame seeds, basil, dry redchillies paste, asafoetida and necessary salt with the flour mixture. ¾ tumbler of oil is added and the dough is kneaded strong. Spread a clean cloth, take the dough in hand. Start swirling the murukku dough with fingers around the pebble stone which you have already kept on the cloth. Once the twisted murukku dough slightly gets dried, deep fry the swirls in hot vegetable oil and your Kai Suthu murukku is ready.

You can eat it for months together if stored carefully.

Murukku – A Sentimental Snack …..






Murukku is a common snack preferred by all ages in all seasons and it being as a gifted bite in South India. Murukku adorned all festive seasons in Tamilnadu and it is a sentimental savoury of here. Some use their hands to prepare the Murukku, which one called Suthu (twisted) Murukku. (Twist the dough around the pebble). Murukkus are available in many varieties and name...... manapparai murukku, achu murukku, kaara murukku and more…

The mixing of ingredients is one of the prime factors in all cooking, Use 500g raw rice flour to 100g urad dal, recent day’s good quality readymade Murukku flours are available in different brand names.

You would know the preparation of this unique savoury but I just reveal you my experienced instructions to prepare the tastiest Murukku.

Instructions

A tsp of soda bi carbonate gives natural taste, colour and flavour to the Murukku. As more, the soda and fresh oil together incorporates new taste to it.

In one word crispiness alone makes the murukku tastier, to get crisp form add little dalda (vanaspati) into the dough mixture, assure you for the better texture and crispiness. Adding the correct quantity of urad dal also gives the crispiness. Crispiness longer the shelf life.

Fry the murukku in well heated oil as much possible use the fresh oil. you include masalas (redchilli powder) and colour for the spicy murukku.

Drain the murukku well and store it in air tight container

Just try my quantity

Branded murukku flour – 500g
Urad dal – 100g
Vanaspati – 50g
Jeera seeds – 1/2 tsp
Black sesame seeds – a little
Saunf – a little
Basil – a little
Salt – as required and water

Use the above basic murukku quantity to prepare the variety of murukku at your home. (karukku murukku) Hearing the biting sound … continue… hey because of karukku murukku noise it so called murukku.... ????? ssssssss hhaha...
