Gulab Paniyaram



Raw rice- 1 kg
Parboiled rice – 1/2kg
Urad dal- 200g
Jaggery – 50g
Salt – a little
Sugar syrup – 3 litres
Soda salt – ¼ tsp
Method of Preparation

1.   Soak the raw rice, parboiled rice and urad dal separately. Grind the raw rice, parboiled rice and urad dal separately into smooth batter.

2.      Combine the batter in a vessel. Add broken jaggery, salt and soda salt in the batter, mix all well.

3.     Pour the batter into the Paniyara chatty and cook it. After the paniyaram is prepared, it is soaked in sugar syrup for about 10 minutes and serve.

Diwali Chicken Gravy



Chicken – 1 Kg
Small onion – 150g
Tomato – 60g
 Mint leaves – 5g
Green chillies – 3gms
Ginger paste – 15g
Garlic paste – 10g
Chilli powder – 3tsp
Turmeric Powder – ½ tsp
Garam Masala powder – 1 tsp
Salt to taste
To grind the masala
Cumin seeds – ½ tsp
Fennel seeds – ½ tsp
Coconut, gratings – 100g
Cashewnuts – 30g
Tempering
Refined oil, Curry leaves, coriander leaves, Shallots, cinnamon, cardamom, cloves.

Method of preparation:

1.     Sauté shallots, mint leaves and tomato well, grind it. After the tempering is done, add the grinded shallot and tomato mixture. Stir it well, add the green chillies and ginger, garlic paste. Mix it all together. Add the masala powders one by one.

2.  Pour the water and bring it to boil. Add the chicken and salt. In the meantime, fry the ground masala ingredients in kadai with little oil. Slightly fry and make it into fine paste.

3.     Add the coconut paste into the gravy now. Simmer and cook till it gives good aroma and consistency.

Vacha Mutton Biriyani



Basmathi rice, boiled – 1 kg
Mutton, boiled – ½ kg
Shallots, chopped – 50g
Tomato- 2nr
Mint leaves – a handful
Chilli powder – ½ tsp
Turmeric powder – ¼ tsp
Coriander powder – 1 tsp
Ginger paste – 1tsp
Garlic paste – 2 tsp
Thick Curd – 3 tbsp
Salt to taste
To prepare Special Masala
Pepper corns –3tbsp
Cumin seeds – 1/4tsp
Fennel seeds – 1 tsp
Cardamom – 4nr
Kalpasi – 1 tsp
For tempering – Cinnamon, Cloves & Ghee – 4tbsp

Method of preparation:

1.     Dry fry the special masala ingredients and powder it finely.

2.     Do the tempering then add the shallots. Fry shallots till golden colour.

3.    Add the tomato, make the shallot and tomato to combine well. add ginger and garlic paste. Put the masala powders one by one now, stir continuously till oil ooze out from mixture.

4.     Add the mint leaves, salt and curd. Mix well. Add the special masala powder now. Combine it in gentle fire.

5.     Once the masala mixture get mild thick, add the boiled basmathi rice. Mix it well till masala coats in rice, put mint leaves on top and take it out from fire.

நோய் தீர்க்கும் சுண்டைக்காய்யின் மகத்துவம்




சிலரே டேய் சுண்டைக்காய் என்று திட்டி தீர்ப்போம். உண்மையில் நாம் உணவுக்குப்  பயன்படும் சுண்டைக்கையின் மகத்துவத்தை திட்டும் பெரும்பலோர் அறிந்துருக்கமாட்டார்கள்.

சுண்டைக்காய் உணவுப் பொருளாக பயன்படும் மருந்து என்று சொல்லலாம். இதில் ஏராளமான மருத்துவ விஷயங்கள் இருக்கிறது. மலை காடுகளில் தானாக வளருவது மலைச் சுண்டைக்காய் என்றும், வீட்டு கொல்லைப் புறத்தில்  நாம் பராமரித்து வளர்ப்பது நாட்டு சுண்டைக்காய் என்றும் அழைக்கபடுகிறது. இதைத் தான் நாம் பெரும்பாலும் சமையலில் உபயோகிக்றோம். இது உடலுக்கு நல்ல ஊட்டத்தை தந்து எப்பவும் நம்மை சுறுசுறுப்பாக மற்றும் ஆரோக்கியமாக வைக்கிற குணம் சுண்டைகாய்க்காய்க்கு உண்டு.

சமையலில் சுண்டைக்காய் :

சுண்டைக்காய்யை  வைத்து சட்டியில் எண்ணெய் ஊத்தி ஊளுந்து, கருவேப்பில்லை, வரமிளகாய் போட்டு தாளித்து வறுத்த சுண்டைக்காய் போட்டு புளி, உப்பு சேர்த்து தொக்கு செய்யலாம். பயத்தம்பருப்புடன் சேர்த்து இதை கூட்டு செய்தும் சுவைக்கலாம். முத்திய சுண்டைக்காய்யை சிறுது நசுக்கி மோரில் ஊற வைத்து, வெயிலில் காயவைத்து பின்னர் மோரில் உறைய வைத்து காய்ந்ததும் பத்திரப்படுத்தி வைத்து தேவைப்படும் பொழுது எண்ணைய்யில் வறுத்து சுடான சாதத்துடன் தொட்டுக் கொள்ளலாம். இப்போது கடைகளில் உப்பு சேர்த்து அல்லது சேர்க்காத சுண்டவத்தல் கிடைக்கிறது. சுண்டைக்காய் சோர்வைப் போக்கும், ரத்தத்தைச் சுத்தமாக்கும்.

சுண்டைக்காய்யில் உள்ள மருத்துவக் குணங்கள் :

1. வயித்துக் கோளாறுகளைச் சரி செய்வதில் கில்லாடி சுண்டைக்காய். இதை வாரத்திற்கு இரண்டுமுறை உண்டு வர வயித்தில் உள்ள கிருமிகள் சரியாகிவிடும்.

2. அஜீரணம், குடல் புண், குடல் கசடுகள் நீக்கிவிடும், வயித்தின் உட்புறம் பலமாவதற்கு சுண்டைக்காய் சிறந்தது.

3. கை, கால் நடுக்கம், சோர்வு போன்றவற்றை சரியக்கிவிடும்.

4. மூச்சுவிட முடியாமல் அவஸ்தைப்படுகிறவர்கள் சுண்டைக்காயை உணவில் சேர்க்கலாம்.

Mutton Curry / Chettinadu Style Mutton Curry recipe

Small onion, chopped – 150g
Mutton, boiled – 500g
Tomato, chopped – 50g
Turmeric powder – ½ tsp
Coriander powder – 2 tsp
Chilli powder – 1 tsp
Salt to taste

To make Curry Masala

Grated coconut – 150g
Cashewnut – 20g
Pepper powder – ½ tsp
Cumin powder – ½ tsp
Khus Khus – 1 tbsp
Ginger paste -2 tbsp
Garlic paste – 1 tbsp

For tempering

Refined oil – 2 tbsp
Cinnamon - 2
Cardamom – a small piece
Fennel seeds – ¼ tsp
Curry leaves a few
Fenugreek seeds – a few
Urad dhal – a few
Staranise – a small piece


Method of Preparation

1.Heat oil in kadai, add the grind masala ingredients to make mutton curry masala. Fry and grind it well.

2. Once the tempering is done, add the small onion. Nicely fry and add mutton pieces. Mix it altogether.

3.Add tomato now, mix and add the masala powders in it. Stir and add the water. When the water gets boil, add salt and ground mutton curry masala. Mix it all together.

4. Let it to cook in simmer fire. When it reaches consistency and taste, take it out from fire.

5. This Mutton curry will be in authentic Tamilnadu village style taste.

Chicken Curry without Coconut / Home Style Chicken Curry without Coconut



Onion – 350g
Green chillies, slitted – 10nrs
Ginger and Garlic paste – 25g
Tomato – 120g
Turmeric Powder – 1tsp
Chilli powder – 2 ½ tsp
Coriander powder – 5tsp
Water as required
Salt to taste
Chicken – 1kg

For Tempering

Refined Oil
Cinnamon – 1/2
Cloves – 4
Cardamom – 5
Bay leaf – 2
Star anise – 2
Curry leaves a few

Method of Preparation

1.     Once the tempering is done, add onion and greenchillies, fry it well.

2.     Add ginger and garlic paste, stir it well for few seconds.  Add tomato, slightly fry
altogether. Add turmeric powder, coriander powder and chilli powder. Stir and add the chicken pieces.

3.     Add enough water to boil the chicken and put salt. Mix and boil till the chicken is cooked and awesome emanates from curry.

4.     It is a suitable combination for rice and other Indian breads.

Cooker Mutton Fry



Mutton – 500g
Onion, sliced – 2
Tomato, sliced – 1
Coconut – 400
Cashewnut – 20g
Ginger paste – 11/2 tsp
Garlic paste – 1 tsp
Chilli powder – 1tsp
Turmeric powder – ½ tsp
Jeera powder – 1tsp
Pepper powder – ½ tsp
Small onion - 50g
Garam Masala powder – 1 tsp
Salt to taste
For Tempering
Oil
Cinnamom
Jeera seeds
Saunf
Curry leaves

Method of Preparation

1.   Pour little oil in kadai and slightly fry coconut, small onion, Cashewnut, onion, ginger and garlic. Fine paste the fried items.

2.     Heat oil in cooker, temper and add the coconut paste. Stir till the paste separate from oil. Add the masala powders (except pepper powder), mix well.

3.     Add the mutton pieces, salt and tomato. Stir and add the water to cover the mutton in cooker.

4.     Close the cooker lid and wait for eight whistles to get the mutton cook.

5.     Open the cooker and add pepper powder. Stir it till the water in mutton dry out completely and also the masala coated well in mutton.
